Absinthe Verte

A classic Absinthe made using wormwood, fennel, anise, marjoram, hyssop and mint. To craft Absinthe Verte, we begin by macerating absinthe in our high proof house vodka – starting the maceration during the full moon. As the next lunar cycle reaches its peak, we then add additional botanicals to round out the profile of this classic sipping spirit. Finally, as the moon reaches fullness for the 3rd time, we distill the macerate then add a few additional botanicals for one final short maceration before bottling this unique expression. The resulting spirit offers an herbal, spicy profile – highlighted best in classic, spirit forward cocktails – or served the way artists and writers of the 19th century enjoyed it most – with water and sugar cube.

Aradia Aperitivo

Aradia is inspired by classic bitter Aperitifs and the unique flavors of New Mexico. We’ve created an amaro that highlights the warm, spicy flavors of Osha Root, one of our most cherished native plants. Combined with aromatic herbs and roots including Gentian, Angelica, Citrus Peel and Cherry Bark, our Aradia Aperitivo captures the spirits of the Southwest. Aradia is colored with black carrot concentrate, making it an excellent vegan apertivo option.

Crafted in small batches at our Santa Fe, New Mexico distillery, Ixchel Botanical Dry Curaçao is made with bitter Laraha and Valencia orange peel, supported by Madagascar vanilla, Ceylon cinnamon, allspice berries, medjool dates, and clove. Finished in oak casks at high altitude, the spirit gains structure, softness, and complexity. In the mountain desert of Santa Fe, Juniper and Piñon grow in abundance. Because of this, they make the perfect base botanicals for our signature high desert style American Dry Gin, Sigil. Much as a sigil draws power from the combining of words and symbols, this gin expression is made unique by the various New Mexican botanicals working as one to evoke a sense of place, summoning the smells and vibrations of the high desert.

Doc Brown’s flagship small batch 4-year This bourbon is named for Doc Brown's youngest granddaughter — a girl who is sharp, spirited, and impossible to overlook. Tasting Notes: A vibrant, citrus-forward amaro with floral notes of lavender and violet, a hint of spice, and a smooth, lightly bitter finish that’s both playful and elegant. Amaricano Viola was born from a cocktail we created for Seattle’s Pride in the Park—the Lavender Daisy—made with our Bianca, gin, butterfly pea flower, lemon juice, and lavender bitters. It was such a hit that we started experimenting to see if we could capture that same vibrant flavor and color using only our amaro. The result was a limited release that sold out almost instantly. So, we made it official: Viola is now a full-time member of our portfolio. It's great on its own on the rocks with a lemon twist, in a Negroni, or in a spritz and can stand in for Crème Yvette or Crème de Violette in cocktails like the Aviation, offering a more complex, less sweet twist. While it shares some traits with Parfait d’Amour, Viola is unmistakably an amaro—bringing layered depth and a refined, bittersweet balance to every sip.

Batch #2 is a blend of WhistlePig Straight Rye and Black Button Bourbon, whose recipe was created by an esteemed group of seasoned distillers and STEPUP Foundation alumnus. The profits from this 500-bottle release will benefit the STEPUP Foundation, the diversity and inclusion initiative founded by the American Craft Spirits Association (ACSA).

Roundstone Rye® - 80

Becky's "Distiller's Edition" of the very popular Roundstone Rye. Only one in every ten barrels gets selected to be in the Roundstone Rye "92 Proof" whisky. This whisky is the culmination of several years of planning. "For a few years now, we've been putting whisky away for storage," remarked Becky Harris, Chief Distiller and President of Catoctin Creek Distilling Company. "We pulled some of the more interesting barrels from the back of the warehouse and decided to release these at a higher proof: a whisky specially curated for flavor, while still being remarkably smooth, as is our existing 80 proof Roundstone."

Roundstone Rye® - 92

Roundstone Rye® is a very unique rye whisky, made completely from scratch at our distillery in Purcellville, Virginia. This pre-Prohibition style rye whisky is made from 100% rye grain, sourced locally when available. It is mashed, fermented, distilled and aged completely in our distillery, before bottling it at a very sippable 80 proof. Aged in new charred white oak casks for a period of around two years, the whisky is smooth, woody, with that full-bodied fruity-nutty grain flavor typical of a Virginia rye whisky. Roundstone Rye has a delicious woody taste, with notes of caramel, rich butter toffee, and just a hint of lemon in the nose.

Catoctin Creek Hot Honey Rye® is a reprise of a very popular Barrel Select offering done in 2022. When you take Catoctin Creek's beautiful, potstilled 100% rye whisky, and you add three types of local Virginia honey (wildflower, clover, and buckwheat) and an infusion of chile peppers, you get something amazing. Because they use real honey, the aroma and flavor of honey are dominant in this whisky, and the honey gives a very pleasant viscosity/mouth feel. Just as you're savoring the whisky, the peppers come in with a surprising and delightful bit of heat.

Released at approximately 58% ABV (it varies depending on the individual barrels), this is seriously strong whisky! Simple Goodness Sisters launched as a brand in 2018, but it could be argued that it began far before that, when the sisterhood began. Venise and Belinda grew up in a blue collar, entrepreneurial family in Western Washington.

We use only organic, unbleached cane sugar that is non GMO, and no dyes. Pairs well with gin, vodka, coffee, tea tequila, light rum, prosecco, rose or white wine, and nonalcoholic drinks.

This 4-year aged rum starts off in Colorado's Laws Whiskey House barrels then finishes in rye whiskey barrels. This aromatic spirit has a natural sweetness and notes of vanilla, cardamom, ginger, honeysuckle, with a spicy rye finish. There are no additives of any kind—what you see and taste come straight from barrel aging. We love it for sipping and to add a little something extra to dark-rum cocktails.
